For cheesy beef nachos
- 1 lb ground beef
- 2 tbsp vegetable oil
- 1 bag Tostitos chips
- 1 medium white onion chopped
- ½ medium bell pepper chopped
- 2 tbsp potato starch or 1.5 tbsp corn starch
- ½ c canned tomato sauce no salt added
- 2 c cheddar cheese mixed color, shredded
- 2 tsp Cajun seasoning
- salt & pepper to taste
For garnish
- ¼ c pico de gallo optional
- 2 tbsp cilantro leaves chopped
- 2 medium jalapeno sliced
Make beef nachos on stove top
Ina large sautéed pan, heat vegetable oil, then add chopped onions in a sautéed pan over medium-high heat until they turn golden brown. About 2-3 minutes.
Add ground beef and cook until the beef is fully cooked, approximately 8 minutes.
Add potato starch, and Cajun seasoning and occasionally stir to blend everything together.
Reduce the heat to medium-low, stir in tomato sauce and coat the beef completely with sauce for a few minutes.
Adjust seasoning with salt and pepper if needed. Remove the pan from the heat.
Bake beef nachos in the oven
Pre-heat the oven to 350F, and choose the broil setting.
In a cast iron skillet, put the Tostitos chip in.
Add half amount of cooked ground beef on top of Tostitos chips.
Followed by half amount of shredded cheese.
Then add the remaining ground beef and top it up with the rest of the shredded cheese.
Bake in the oven for 10 minutes or until the cheese is melted completely.
Garnish with jalapeno, bell pepper, cilantro leaves, pico de gallo and serve hot immediately.
