In a mixing bowl, toss together cooked rice with eggs, sesame oil, rice wine vinegar and soy sauce until the rice is completely coated with the mixture.
Add mixed veggies, garlic, ginger to the rice and mix well.
Add and toss slice of sausages with the rice.
Coat the bottom of your sheet pan or casserole with enough vegetable oil. Then add already well tossed rice mixture into the pan.
Spread the rice evenly on the pan/casserole and bake for 15 minutes.
Use a wooden spoon or spatula to scrape up the rice and spread it out evenly again.
Return the rice to back to the oven and cook for another 5 to 10 minutes. The longer you leave it in the oven, the crispier your quick fried rice will be.
Adjust seasoning with salt and pepper if necessary. Served hot immediately.
