Pat dry salmon, then cut it into bite-size bites. Lightly season them with salt and pepper.
Pour vegetable oil in a non-stick skillet and heat on medium-high heat.
When the oil is hot, add and fry salmon in small batches, 1 minute for each side. Do not overcrowd the pan. Then transfer fried salmon to a clean dish.
Drain and discard the excess cooking oil. Add and melt unsalted butter in the pan.
Once the butter has completely melted, add minced garlic and cook for 1 minute over low heat.
Then add Cajun, other spices, and honey to the butter garlic mixture. Give the sauce a few stirs to dissolve everything completely.
Add salmon bites to the pan. Gently toss and coat all the salmon with the sauce. Immediately turn off the heat.
Transfer the salmon with Cajun honey butter sauce to a serving dish. Garnish with chopped green onion. Quickly squeeze a splash of fresh lemon juice on top before serving.
Serve hot immediately.
