Ingredients

  • 4 slices bread at least 1 inch
  • 2 large eggs
  • ½ tsp pumpkin spice
  • 1 c whole milk
  • 1 pinch sea salt fine ground
  • 2 tbsp sugar
  • 2 oz unsalted butter cut into small cubes

Options for topping

  • whipped cream
  • fresh fruit
  • honey or maple syrup
  • powdered sugar
  • pumpkin spice

Instructions

  • In a medium size mixing bowl, whisk together whole eggs, pumpkin spice, sugar, and salt until thoroughly combined.
  • Add heavy cream and continue whisking.
  • Strain the milk mixture into a clean container through a fine sieve. Set aside for later use. You can make this mixture the night before.
  • Work on each slice of bread at a time. Add a slice to the milk liquid and soak on each side for 10 seconds.
  • In a large skillet, heat a cube of butter over medium heat until it is melted completely.
  • Put the slice in the middle of the pan and toast for 2 minutes on each side, or until nicely golden brown.
  • Repeat this process until all the bread slices are toasted.
  • Serve French toast immediately with your desired toppings: a cube of softened butter, whipped cream, fresh fruit, a generous amount of honey or syrup, and sprinkle with powdered sugar and extra pumpkin spice for more flavor.
