Keto friendly pancake bites

These keto friendly morning pancake bites are worth getting out of bed because they're moist, soft, delicious and not sky high in carbs.

  • 6 oz cream cheese room temperature
  • 4 large eggs
  • ½ c coconut flour
  • 1 ½ tsp baking powder
  • c sugar
  • 2 tbsp unsalted butter melted


  • Pre heat oven to 375F. Grease a brownie molds with spray cooking oil.
  • Put cream cheese in a mixing bowl of a stand mixer fitted with paddle attachment and beat on medium slow beat. Approximately 2 minutes.
  • When cream cheese is completely creamed, add coconut flour, baking powder, egg and liquid Stevia and continue to blend for 2 minutes.
  • When the mixture is smooth, add melted butter to the batter and beat for another minute.
  • Let the mixture rest for at least 30 minutes. Then pour the batter evenly into the brownies silicon molds. Bake for 15 to 20 minutes.
  • You can check for pancake bites doneness by insert a bamboo toothpick in the center of pancake. If the toothpick comes out clean with no batter sticks to it, then the pancake bites are done.
  • Serve immediately with butter, dark chocolate chips or berries (see notes).


  • As long as dark chocolate is at least 70% cacao then you're good to go.
  • Some berries are not off limits such as cranberries, blackberries, and raspberry.
