Pre heat oven to 375F. Grease a brownie molds with spray cooking oil.
Put cream cheese in a mixing bowl of a stand mixer fitted with paddle attachment and beat on medium slow beat. Approximately 2 minutes.
When cream cheese is completely creamed, add coconut flour, baking powder, egg and liquid Stevia and continue to blend for 2 minutes.
When the mixture is smooth, add melted butter to the batter and beat for another minute.
Let the mixture rest for at least 30 minutes. Then pour the batter evenly into the brownies silicon molds. Bake for 15 to 20 minutes.
You can check for pancake bites doneness by insert a bamboo toothpick in the center of pancake. If the toothpick comes out clean with no batter sticks to it, then the pancake bites are done.
Serve immediately with butter, dark chocolate chips or berries (see notes).
