Easy Beef With Potato Chips

Beef with potato chips is an easy meal for a busy day. This quick & savory dish tastes so good by itself or with a bowl of hot steamed rice.

Ingredients 

For marinade

For Cooking

  • 2 tbsp vegetable oil
  • 1 medium white onion cut into wedges
  • 1 medium bell pepper cut into cubes
  • ½ oz unsalted butter
  • 1 tbsp garlic minced, optional

For Serving

  • ½ bag potato chips
  • 2 tbsp green onion chopped
  • 2 bowls steamed rice optional

Instructions

  • Place all marinade ingredients in a mixing bowl. Mix until everything is combined. Set aside.
  • Heat vegetable oil in a non-stick skillet over medium or medium-high heat (See notes).
  • When the oil is hot enough, add marinated beef. Quickly stir for 1-2 minutes until the outside of the meat is cooked evenly.
  • Add minced garlic to the skillet (if desired). Stir or shake the pan vigorously for another minute.
  • Finally, add bell peppers and white onion, followed by unsalted butter, and stir/shake until the vegetables are almost entirely cooked, about 2-3 minutes.
  • Turn off the heat. Remove the skillet from the stove immediately to avoid carry-over cooking.
  • Transfer sauteed beef to a bed of potato chips on a serving dish. Garnish with green onion.
  • Serve immediately with a hot bowl of steamed rice or by itself.

Notes

  1. Cooking heat: choose the proper cooking heat for your beef. If you prefer your meat to be medium/well-done, cook it on medium heat for 2-3 minutes. If you like your meat to be medium rare, cook it on medium-high heat for 1-2 minutes.
  2. Cuts of beef: Besides ribeye, you can pick another suitable cut of beef for this recipe, such as strip loin, tenderloin, skirt steak, or flank steak.
  3. Minced garlic: It's an option to add more minced garlic during the cooking process; thus, it's been included in the marinade mixture.
