Salt and Pepper Chicken Wings

These Chinese-style salt and pepper chicken wings will make you keep eating and asking for more.

Ingredients 

  • 1 lb chicken wings

Salt and pepper mixture

  • ¼ tsp white pepper
  • ¼ tsp black pepper
  • 1 tsp Kosher salt
  • tsp cinnamon powder
  • 1 small white onion small dice
  • ½ small bell pepper small dice (or 2-3 jalapeno, sliced)

Marinade mixture

Dipping sauce

  • 1 tsp Kosher salt
  • ¼ tsp white pepper
  • tsp black pepper
  • 1 tsp sugar
  • 1 tbsp lime juice freshly squeeze
  • ¼ tsp vegetable oil

Others

  • cilantro leaves for garnish
  • vegetable oil for frying

Instructions

Marinade & fry chicken wings

  • In a large mixing bowl, mix chicken wings evenly with marinade mixture.
  • Let the chicken marinade in the fridge for at least 30 minutes.
  • In a shallow frying pan, add vegetable oil (more than halfway) and heat on medium-high heat. Make sure the oil reaches 350F before frying chicken wings.
  • Work in small batches: Fry the wings until they turn golden brown and become crispy - approximately 8-10 minutes.
  • Continue working with the rest of the chicken wings. If you need to add more oil, remember to wait for it to reach 350F before continuing frying. Set the fried chicken nuggets aside.
  • Put the frying chicken wings on a large plate or sheet pan lined with oil-absorbing papers.

Make S&P chicken wings

  • In a small mixing bowl, combine salt, white pepper, black pepper, and cinnamon powder.
  • In a large sauté pan, add 2 tbsp of vegetable oil and heat on medium-high heat. Then add diced white onion and bell peppers (or sliced jalapeno). Sauté the vegetables for a few minutes.
  • Followed by the seasoning mixture. Shake or stir the pan vigorously until you can smell the fragrance of cinnamon powder.
  • Then, immediately add the fried chicken wings to the pan. Give the pan a few shakes to coat the wings evenly with the salt and pepper seasoning. Approximately 1 minute.

Serving

  • Put all ingredients in the dipping sauce in a mason jar and shake to mix them together.
  • Serve salt & pepper chicken wings immediately with dipping sauce on the side. Enjoy!

Notes

  • Make sure to add ONLY enough chicken wings that your sauté pan can handle. You don't need to cook them all at once.
  • Overcrowding your pan with chicken wings can make them soggy (this applies to both the frying and sauteing processes).
