I love spam, you love spam, everybody loves spam. My friends back in the States told me that months ago when Covid-19 just broke out, spam was out of stock every where. Even Costco took a while to restock these delicious spam. You can just think of a thousand ways to eat spam and all of them are delectable. And this grilled corn with spam recipe is a must try this summer.

I also add a twist, instead of mayo, I use scallion oil as a binding agent. The scallion oil brings a brand new flavor profile to this grilled corn with spam recipe.
If you haven't had scallion oil before, then you must try it. This wonderful ingredient can be found a lot in Vietnamese cuisine. In fact, most of my recipes call for it. Jump to RecipeHow to achieve the right grilled corn?
I know a lot of people prefer boiling corns before grilling them, however I do not recommend doing so. Because it's very easy to overcook corn this way. And overcooked corn is tasteless and has no nutritional factor anymore.
In this recipe, I soak corns in lightly salted water for 15 minutes. This way not only helps to speed up the cooking process but also is the best way to marinade those corns.
Opened flame or oven?
If you have a grill in your back yard then good for you. All you need to do is pop one of these marinated corns on the grill and let the flame take care of the rest.
But if you don't have one, just like me, then oven to the rescue. Don't be afraid of using your oven to obtain this wonderful grilled corn recipe. Just set your oven to high heat (I set mine at 450F), and let the magic work it way.

Yes, I happen to have another wonderful spam recipe called: Onigirazu (Spam musubi). This is also the first recipe published on my blog. And if you enjoy this grilled corn, you probably love this sauteed corn in brown butter too. It's a famous food street in Vietnam and super quick to make.
Grilled Corn with Spam (Elote)
Ingredients
- 3 corn on the cob
- Emmental cheese grated
- 5 stalk green onion chopped
- spam cut into small cubes, as needed
- 2 oz vegetable oil for scallion oil
- extra vegetable oil for grilling
Instructions
- In a large bowl or pot, combine 6 c of water with 1 tbsp of Kosher salt. Submerge corns completely under the water and let them marinade for 15 minutes.
- Turn on your grill or pre heat oven to 450F.
- Take those corns out of lightly salted water and brush with vegetable oil then put on the grill. If you're using oven, grill for 10 minutes, then turn the corn and cook for another 10 minutes. The corns will be lightly charred.
- In a mean time, in a cooking pan, add 2 oz of vegetable oil and heat on medium high heat. When oil is hot enough, add chopped onion and stir for 5 seconds, immediately turn off the heat and let onions carry over cooking for a minute or so. Remove the pan off the heat completely.
- Optional: you can eat spam directly from the package or you can quickly cook them with a little bit of oil over medium high heat.
- When grilled corns are done, take them out of the oven. Immediately grate cheese on top of corns so they can be melted quickly. Add scallion oil followed by cubes of spam. Enjoy!
