I have another delicious lips-smacking recipe starring beef and chips on the blog. Have you tried this cheesy ground beef nachos? Beef goes so well with any chips, from tortillas to potato chips. Not to mention, both recipes are so simple and quick to make.
As mentioned above, you can cut the cooking time by prepping ingredients beforehand.
Cut bell peppers and white onion to get ahead, then put them in air-tight containers. Both can be kept under refrigeration for up to 2 days.
You can even mince garlic, store them in a zip-loc, and put them in the freezer. Frozen minced garlic can be kept for up to 2 months. Then, when you're ready to cook, you just need to toss it directly to the hot pan (no need to defrost ahead of time).
How to cook this quick & easy dish
Heat vegetable oil in a non-stick skillet. Depends on how you want your beef cook, you should choose a proper cooking heat setting: medium or medium-high heat.
If you prefer your meat to be medium/well-done, cook it on medium heat for 2-3 minutes. If you like your meat to be medium rare, cook it on medium-high heat for 1-2 minutes.
You should constantly stir or shake the pan vigorously during cooking, especially after adding the vegetables and unsalted butter, to prevent everything from overcooking.

Best cut of beef for sauteing
For this easy beef with potato chips recipe, the best cut of beef I pick is the ribeye, which has a little more fat than other types (but not too much), making it the most flavorful choice.
If you prefer more fat, strip loin is the next best thing. But remember, strip loin can become chewy if you over cook it.

For marinade
- ½ lb ribeye cut into bite size cubes
- 2 tbsp sugar
- 2 tbp oyster sauce
- 2 tsp soy sauce
- ¼ tsp Kosher salt
- 1 tsp chili flakes
- ½ tsp sesame oil
- 1 tsp garlic minced
- ½ tsp garlic powder
For Cooking
- 2 tbsp vegetable oil
- 1 medium white onion cut into wedges
- 1 medium bell pepper cut into cubes
- ½ oz unsalted butter
- 1 tbsp garlic minced, optional
For Serving
- ½ bag potato chips
- 2 tbsp green onion chopped
- 2 bowls steamed rice optional
Instructions
- Place all marinade ingredients in a mixing bowl. Mix until everything is combined. Set aside.
- Heat vegetable oil in a non-stick skillet over medium or medium-high heat (See notes).
- When the oil is hot enough, add marinated beef. Quickly stir for 1-2 minutes until the outside of the meat is cooked evenly.
- Add minced garlic to the skillet (if desired). Stir or shake the pan vigorously for another minute.
- Finally, add bell peppers and white onion, followed by unsalted butter, and stir/shake until the vegetables are almost entirely cooked, about 2-3 minutes.
- Turn off the heat. Remove the skillet from the stove immediately to avoid carry-over cooking.
- Transfer sauteed beef to a bed of potato chips on a serving dish. Garnish with green onion.
- Serve immediately with a hot bowl of steamed rice or by itself.
Notes

- Cuts of beef: Besides ribeye, you can pick another suitable cut of beef for this recipe, such as strip loin, tenderloin, skirt steak, or flank steak.
