If you're looking for a perfect savory side dish or appetizer that guarantee to keep you full for a long time, then this recipe is for you. Creamy baked sweet potatoes only takes an hour to an hour and a half to make but the end result will last for hours. Your stomach definitely will be happy about this.
What makes it even better? Well it's not an ordinary stuffed sweet potatoes because it is mixed with everybody's all-time-comfort-food favorite: spam.

Sweet potatoes varieties
Sweet potatoes are members of potatoes family. There are two types of sweet potatoes commonly available in the States:
- One has yellow flesh and mealy texture. It is regularly known as boniato, white or Cuban sweet potato.
- I'm using Japanese sweet potatoes in this creamy baked sweet potatoes recipe. They also have a yellow flesh; however it may be hard to find these in the States. But you of course are welcome to substitute it with your most favorite pick of potato.
- The other has a darker orange, moister flesh and is higher in sugar. It is known as red sweet potato.
- Due to its more attractive color, people tend to pick this over the yellow flesh one. You can easily find these on any holiday dinner table.
- Both types of sweet potatoes have thick skins ranging in color from light tan to brownish red.
Difference between yams and sweet potatoes
Both yams and sweet potatoes have tubers shapes and belong to potatoes family. Compared to sweet potatoes, yams are less sweet but they can be used interchangeably.
The flesh of yams are ranging from creamy white to to white purple to deep red. Sometimes dark-skinned sweet potatoes are erroneously labeled as yams due to its color.

How to bake sweet potatoes
- Scrub the sweet potatoes well to get rid of dirt, but do not peel them. Pierce the skin of each sweet potato with a fork to allow steam to escape. You can cut them in half, lengthwise to speed up the process.
- Rub the sweet potatoes with oil.
- Bake at 400F in the oven until done, approximately an hour.
How to cook this creamy baked sweet potatoes
- Cut baked sweet potatoes in half lengthwise then carefully scoop out the flesh while leaving the skins intact.
- Whip the sweet potato flesh whole milk, mozzarella or emmental cheese, spam, and apple. Then add salt and pepper to taste.
- The mixture should be light and fluffy, not lumpy. If the mixture gets thicken overtime, heat it up on a pan and thin with a little bit of milk.
- Scoop the mixture back into the skins and smooth out the tops.
- Sprinkle with chopped fresh sage.

Creamy Baked Sweet Potatoes with Spam and Apple
Ingredients
- 2 medium sweet potatoes
- 2 tbsp vegetable oil
Stuffing
- ½ small apple cut into small cubes
- ½ can spam cut into small cubes
- 2 oz mozzarella or emmental grated
- ½ c whole milk
- salt & pepper to taste
Others
- 1 sprig sage chopped, for garnish
- ¼ c whole milk used to thin out if necessary
Instructions
- Pre heat oven to 400F
- Scrub the sweet potatoes well to get rid of dirt, but do not peel them. Pierce the skin of each sweet potato with a fork to allow steam to escape. You can cut them in half, lengthwise to speed up the process.
- Rub the sweet potatoes with oil.
- Bake sweet potatoes until done, approximately an hour.
- In a medium sautéed pan, combine spam and apple and cook for 2 to 3 minutes. Set aside.
- When sweet potatoes are done baking, carefully cut them in half lengthwise then carefully scoop out the flesh while leaving the skins intact. You might want to let them rest at room temperature for 5 to 10 minutes before cutting.
- Combine sweet potato flesh, whole milk, mozzarella or emmental cheese, spam, and apple in a stand mixer's mixing bowl fitted with paddle. Whip on medium low speed until the mixture is incorporated and creamy. Add salt and pepper to taste. Approximately 2 to 3 minutes.
- The mixture should be light and fluffy, not lumpy.
- Scoop the mixture back into the skins and smooth out the tops.
- Sprinkle with chopped sage. Serve immediately.
