This Vietnamese inspired fried rice recipe is my new go-to one. It's easy and super quick to make. All you need is a baking style pan, a few of your favorite ingredients to accomplish this delicious quick fried rice recipe. Or in other words casserole fried rice (sheet pan fried rice).
There're days that I don't feel like doing too many dishes. Since this blog turned into my full time job last Spring, I literally have to do pile of dishes 2 times a day.
With every recipe you saw on this blog, came at least 2 hours of cleaning. Yeah, that's how exhausted I am with washing dishes.
That is why I was super excited to test this quick fried rice recipe. And I was over the moon when the recipe turned out perfectly.

Cooking schedule
You'll be able to achieve this sheet pan fried rice (casserole fried rice) for under 45 minutes. With a bare minimum of prepping and a very less amount of dishes to deal with.
Here is an estimated cooking schedule for this quick fried rice recipe:
- 6:00 pm - pull out ingredients from the fridge/pantry
- 6:10 pm - mix/toss ingredients together
- 6:15 pm - bake rice in the oven, first round (15 minutes)
- 6:30 pm - take the rice out of the oven and quickly mix
- 6:31 pm - keep baking rice in the oven, second round (5 to 10 minutes)
- 6:41 pm - serve
What's kind of rice is best for fried rice
Rice is the starchy seed of a semi aquatic grass/plant. It is used as a staple by more than half the world's population.
Rice can be incorporated into almost any cuisine. From Vietnamese glutinous rice banana cake to Japanese onigirazu to Korean rice juice.
Rice is divided into three types based on its seed size: long grain, medium grain, and short grain.
Long grain rice is the most versatile one and popular worldwide. The grains remain firm, fluffy and well separated when cooked. It also has the less amount of starch compared to the other two. Because of these characteristics, long grain rice is the best pick when it comes to fried rice. Therefore, this is what I used for this Vietnamese inspired fried rice recipe.
Short grain rice has the most starch between the three and becomes sticky when cooked. Italian risotto, Japanese sushi and Spanish paella are all made with short-grain rice. So if you want such perfect Chinese/Vietnamese style fried rice, you should steer clear of short grain rice.
Medium grain rice's starch content fall some where in between. It becomes sticky when cool so it is best served hot immediately after finished cooking.
How to cook rice
Rice may be rinsed before cooking to get rid of debris and dirt. But, keep in mind, rinsing process can also remove some of rice's nutrients.
So if you have to rinse your rice, just don't over do it. 1 or 2 times max.
It is not necessary to rinse most American-grown rice which is almost clean and free of insects.
Some kinds of rice like glutinous rice, basmati, or long-grain brown rice may be soaked before cooking. The soaking process helps to soften the grains and remove some starch and speed up cooking process.
The standard ratio for cooking rice is generally two parts liquid to one part rice. For quick fried rice recipe, I used 1 cup of uncooked long-grain white rice which yields 3 cups of cooked rice.
Essential ingredients
- Rice - I usually use Three Ladies jasmine rice, it is sold widely across Asian markets in the US. Or you can also buy this brand on Amazon.
- As mentioned above, 1 cup of uncooked rice usually yield 3 cups of cooked rice.
- Rice wine vinegar - this adds a nice touch of flavor to the fried rice. You can substitute rice wine vinegar for apple cider vinegar.
- Asian style sausages (lạp xưởng) - the star of this quick fried rice recipe. Lạp xưởng makes a great companion for any fried rice especially the Vietnamese style one. Of course you are welcome to switch these for regular American sausages.
- Eggs - a must-have ingredient. You can also make a super quick and delicious egg fried rice using this recipe.
- Sesame oil - the oil adds a unique fragrance to the rice.
- Frozen mixed veggies, ginger, garlic, green onion and soy sauce.
How to make this quick fried rice recipe
Time needed: 45 minutes
This sheet pan fried rice recipe is called for sausages thus its is a sausages fried rice. However, you can also make egg fried rice, vegetable fried rice or your own version of fried rice while applying the same method.
- Mix rice with eggs & soy sauce
In a mixing bowl, toss together cooked rice with eggs, sesame oil, rice wine vinegar and soy sauce until the rice is completely coated with the mixture.
- Mix assorted veggies into the rice mixture
Add mixed veggies, garlic, ginger to the rice and mix well.
- Toss with sausages
Add and toss slice of sausages with the rice.
- Bake fried rice in the oven at 450F
Coat the bottom of your sheet pan or casserole with enough vegetable oil. Then add already well tossed rice mixture into the pan.
Spread the rice evenly on the pan/casserole and bake for 15 minutes.
Use a wooden spoon or spatula to scrape up the rice and spread it out evenly again. Return the rice to back to the oven and cook for another 5 to 10 minutes. The longer you leave it in the oven, the crispier your quick fried rice will be.

Quick Vietnamese inspired fried rice
Equipment
- Sheet pan or casserole (about 8x8 inch size)
Ingredients
- 3 c cooked long-grain white rice see notes for guidelines of how to cook rice
Wet ingredients
- ½ c soy sauce prefer regular one
- 2 tbsp rice wine vinegar or apple cider vinegar
- 1 tsp sesame oil
- 2 large eggs beaten
Veggies
- ½ c mixed veggies frozen, follow instructions on the package for cooking process
- ¼ c green onion chopped
- 3 cloves garlic minced
- 1 small piece of ginger minced, yield around 1 tsp
- 2 links sausages sliced
Others
- salt and black pepper to taste
- 2 tbsp vegetable oil to coat sheet pan/casserole
Instructions
- In a mixing bowl, toss together cooked rice with eggs, sesame oil, rice wine vinegar and soy sauce until the rice is completely coated with the mixture.
- Add mixed veggies, garlic, ginger to the rice and mix well.
- Add and toss slice of sausages with the rice.
- Coat the bottom of your sheet pan or casserole with enough vegetable oil. Then add already well tossed rice mixture into the pan.
